Landon's Curry Recipe

I just made this tonight...and loved it. Not sure if you're into Indian food, but this one is pretty good. Could you pass this one into the Club for me pls.

Indian (Yellow) Curry Chicken:

4 - boneless, skinless chicken breasts, cubed
1 - brown or yellow onion, finely chopped
3 - roma or vine tomatoes, chopped
2 to 3 - cloves of garlic, minced
3 Tbsp - yellow curry powder
1 tsp - ground cumin
1 tsp - ground red chili powder
2 Tbsp - cooking oil (canola or vegetable)
Salt to taste
1/2 cup - water
3 Tbsp - plain yogurt

In a large, non-stick pan heat oil on medium (that's 5 for us here in GTMO). Once heated add onion and garlic and cook until onions are almost translucent. Stir in the curry powder, cumin, & chili powder until all the oil is sucked up. It will turn into almost a paste. Add in the tomatoes and the chicken. Mix well until the chicken is completely yellowed and the sauce is nice and even. At this point I stir in a little water to loosen up the sauce a bit. Add a pinch or two of salt and stir in. Let this cook like this for about 5 mins and then reduce heat to (2) and cover for an additional 15-20 mins. until the chicken is tender. Remove the cover and remove from heat. Stir in the yogurt, mix well.

This goes great with either basmati rice w/cilantro or couscous w/saffron (1/4 tsp, ground), stewed lentils, & your favorite vegetable side.
